Honey’s Sweet Potato Pie



Ingredients

  • 2 medium sweet potatoes (about 1 1/4 pounds)
  • 1/2 stick unsalted butter, melted
  • 3/4 cup sugar
  • 3/4 cup milk
  • 2 teaspoons vanilla
  • 3 large eggs
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon grated fresh nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon dark rum or brandy
  • 3/4 cup coarsely chopped pecans, optional

Directions

  1. Roast sweet potatoes in oven at 375º until soft, about 1 hour. Peel when cool enough.
  2. Combine all ingredients in a bowl and mix well, then pour into a 9 inch pie pan.
  3. Bake uncovered at 350º for about 45 minutes.
