Ingredients
Cake
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups Turbinado or brown sugar
- 4 eggs
- 1 1/2 cups oil
- 2 cups grated carrots
- 1 #2 can crushed pineapple (undrained)
- 1 cup chopped walnuts
Cream Cheese Icing
- 1 box sugar
- 1/2 stick butter
- 1 3oz. pack of cream cheese
- 2 tablespoon half and half or evaporated milk
- 1 teaspoon vanilla
Directions
Cake
- Sift all dry ingredients except sugar.
- Mix oil and sugar.
- Add eggs, one at a time, to the oil and sugar mixture. Beat well after each addition.
- Add flour mixture and mix well.
- Add carrots, pineapple and nuts. Blend well.
- Bake in 13 x 9” cake pan (greased and floured) for 40-50 minutes at 350 degrees. Should be moist when done.
Cream Cheese Icing
- Soften butter and cream cheese together.
- Add milk and vanilla.
- Beat in sugar.
