Red Sage, the fine dining new American Steakhouse at Hilton Santa Fe Buffalo Thunder Resort & Casino, has unveiled a new menu of colorful, New Mexican-inspired small plates, seasonal dishes and traditional favorites with a modern twist under direction of the restaurant’s new Chef de Cuisine Edgar Morales.
Morales took the reins of Red Sage this spring, following a nearly 20-year culinary career in Las Vegas including stints at The Palazzo Las Vegas, Paris Las Vegas Hotel and Casino and Bernard's Bistro at Lake Las Vegas. Taking a modern approach to traditional, New Mexican-inspired cuisine, Morales’ new signature menu items at Red Sage include:
Small Plates & Starters
Roasted Peppers – salted shisito peppers, shaved radishes and lemon oil
Pork Belly – posole stew, red onions, shaved radish and achiote demi
Chicken Chop – warm potato salad, leeks, sorel, mustard demi and salted pepitas
Summer Risotto – Al dente Arborio, edamame, heirloom tomatoes, asparagus and chive oil
Durham Ranch Bison – a sustainably-ranched bison tenderloin known for its tender and juicy body and sweet, rich flavor.
Following a new partnership with Tewa Farms, many Red Sage menu items feature locally-sourced seasonal ingredients from Tewa Farms. The local Pojoaque farm currently provides onions, basil, green chiles, jalapeños and chile pardon to the restaurant and resort.
An evening at Red Sage is made memorable with thoughtful cuisine and a dramatic ambiance featuring a wall-length fireplace, dramatic artwork, expansive glass-enclosed wine cellar and outdoor fire pits overlooking the turquoise pool waters and Sangre de Cristo Mountains. Recently receiving The Wine Spectator’s 2015 Award of Excellence, the restaurant’s extensive wine collection is under direction of Certified Level II Sommelier Laurie Catazone, who also serves at the restaurant manager.
