Recipe: Bing Cherry Gazpacho (Rosewood Inn of the Anasazi)

Chef Edgar Beas’ Bing Cherry Gazpacho (Rosewood Inn of the Anasazi)

  • 1 quart pitted Bing cherries
  • 5 medium heirloom tomatoes
  • 4 medium cucumbers
  • 3 red bell peppers
  • 1 red onion
  • 1½ cup olive oil
  • Salt, to taste
  • Honey, to taste
  • Sherry Vinegar, to taste

Large dice all ingredients. Blend in a blender until smooth, in batches if necessary. Season with salt, honey and sherry vinegar to taste. Garnish with fresh coriander flowers.
