Bouche Bistro, a restaurant in Santa Fe, NM, that opened March 2013, brings delicious cuisine to a new delectable level in Santa Fe, NM. Besides amazing dishes, this establishment looks and feels similar to a local neighborhood place to eat in Paris with its relaxing patio, expressive kitchen, warming wood-burning fireplace. Decorated Chef Charles Dale and his staff prepare unpretentious dishes and offer phenomenal wines at fair prices.
The first restaurant opened by Chef Charles Dale, which happened in 1988, was Renaissance, located in Aspen, CO. The establishment soon garnered multiple major awards in America for both its cuisine and wine, while earning a reputation for being one of the most well received places to dine in the town. Renaissance won the following awards: Food and Wine Magazine’s Best New Chef in America for Charles in 1995; the James Beard Foundation nomination for Best Chef, Southwest, in 1998 and 1999; Wine Spectator’s Best of Award of Excellence; The DiRoNa Award, a Zagat rating of 28, the Mobil Four Star Award, and a host of national and international press.
Since then Charles opened Rustique Bistro, Range, offering New Western cuisine featuring seafood and game. Charles is also and author, writing a book called “Chefs’ Guide to America’s Best Restaurants and is a recipe contributor to several cookbooks across the USA,
Chef Charles Dale | Santa Fe Bound – Auberge Resorts came calling in 2008, asking Charles to join it to be part of the building and opening its new travel destination in Santa Fe, NM, Encantado Resort. More accolades were on the way for Charles, culminating in well-respected food writer John Mariani naming the anchor restaurant of the property, Terra, to the “20 Best New Restaurants of 2008”.
Four Seasons Hotels took over Auberge Resorts June 2012. From there Charles left the Entantado and opened Bouche Bistro March 2013. For a new eatery it is doing quite well. It is the only Santa Fe restaurant that holds the hard soughy 4-chile rating.
