Charles Dale, the acclaimed chef of Terra, Encantado Resort & Spa's signature restaurant, has spent 30 years in the kitchen. To celebrate this milestone, he has established a scholarship in his name, to be awarded to a New Mexico culinary student for an apprenticeship with master chefs.

The prestigious James Beard Foundation will administer the scholarship and oversee the selection process The application will be available on the foundation's website.

To help establish the scholarship, Dale will host a six-course dinner, "30 Years at the Stove: Dinner with Charles Dale & Friends at Terra on June 26, featuring wild Alaskan salmon with tomato jam bruschetta and arugula Parmesan salad and wine donated by Southern Wine and Spirits of New Mexico. The dinner will showcase the culinary offerings of five of Dale's most notable proteges and 70 percent of the proceeds will help fund the scholarship.

Congrats, Charles, on 30 years in the profession! And thanks for establishing such a wonderful scholarship to help New Mexico continue its excellent in the culinary arts.

In a city celebrated for its food and its art, when you receive an invitation to a dinner party that celebrates both, you should definitely take a seat.

At the Artists Table is a series of exceptional dinners that bring legendary Santa Fe artists together with award-winning chefs to create an exclusive meal and a memorable evening of art, fine dining, unique culture and stimulating conversation. The evening benefits the arts and education.

Each dinner coincides with one of the city’s dynamic, historic art markets-- the 61st annual Traditional Spanish Market and the 90th annual Santa Fe Indian Market – providing an unforgettable, authentic experience of Santa Fe culture.

The dinners offer guests an extraordinary meal limited to 60 diners and a rare opportunity for conversations with the chefs and artists. The evening also includes insightful presentations by the chef and artists about their work, and a small original work by the artist.

The first dinner, held July 24 at 6 p.m. at Museum Hill Café, pairs New Mexico santero Arthur López with famed chef James Campbell to celebrate Spanish art and cuisine.

A five-time James Beard Award nominee and one of only four chefs nominated to compete in the Copa Jerez International Food and Sherry Pairing Competition, Campbell Caruso is a master of Basque/Spanish cuisine. His acclaimed restaurant, La Boca, was a winner of the International Wine and Food Society’s Award of Excellence, and is packed nightly. His new cookbook, España: Exploring the Flavors of Spain, has just been published.

Arthur López, a Santa Fe native, is among the finest santeros working in traditional Spanish Colonial artwork, a form unique to New Mexico. His work is exhibited throughout the Southwest and is sought by museums and private collectors.

Native American Art and Cuisine, held at 6 p.m. Tuesday, August 14,  pairs renowned Native American artists Dan Namingha and his sons, Arlo and Michael, with decorated cookbook authors and culinary adventurers Bill and Cheryl Jamison to create a one-of-a-kind menu, served in a stunning, private Santa Fe estate.

This dinner will showcase the ancient and contemporary culture of the American Southwest, hosted by one of our foremost Native artist families and four-time James Beard Award-winning chefs/cookbook authors.

Dan Namingha, from the Tewa-Hopi tribe, has been exhibiting his work for more than 40 years, infused with an unwavering respect for the earth and spirit of his ancestry. Arlo's sculptures reflect his Tewa/Hopi background, while Michael works with digital inkjet images printed on canvas and paper and installations. He currently serves as a City of Santa Fe Arts Commissioner. The Naminghas own and operate Niman Fine Art in Santa Fe, NM.

The Jamisons have written more than a dozen cookbooks and culinary adventure tales, earning four James Beard Awards. They plan to showcase delights from New Mexico’s rich multicultural culinary heritage, featuring recipes from their new book, Tasting New Mexico.

Proceeds from At the Artists' Table's dinners benefit the Partners in Education Foundation for the Santa Fe Public Schools and the City of Santa Fe Arts Commission’s Artist Exhibit and Education Program.

Partners in Education raises funds to support Santa Fe’s public school teachers and students. The Arts Commission nurtures and supports Santa Fe’s unique artistic and cultural heritage.
