Dry Point Distillers operates with an unwavering commitment to regional ingredients. What started as a wholesale operation quickly grew, expanding to include a tasting room, a second bar, a stage, and a kitchen.

Owner Chris Schaefer distills Mesa Vodka, Monsoon Gin, Dry Spell Bourbon Whiskey alongside newer creations like Blue Corn Bourbon Whiskey and Slow Desert Agave Spirit.

“Our goal has always been to capture the true flavors of Southern New Mexico in every bottle,” Schaefer says. This dedication to local sourcing extends throughout his operation, with ingredients coming from regional producers like FARMesilla and Southwest Heritage Mills whenever possible.

Stone Crow Gourmet: Elevating the Food Program

The kitchen houses Stone Crow Gourmet, led by Chef Gary, who brings his considerable skill to the menu. After years refining his approach in various restaurants, Chef Gary established his own culinary identity at Dry Point.

His menu features thoughtfully constructed dishes designed to complement the distillery’s spirits, including various toast preparations like the Tuscan Sun Crostini, the Smoked Atlantic Salmon Crostini, and the Blackberry Garden Crostini as well as burgers and weekly food specials.New Mexico Taste the Tradition.

Dry Point Distillers offers dinner service Wednesday through Saturday, 4 – 9 p.m., featuring Stone Crow Gourmet’s menu of crostini, available in customizable flights.

Bar hours extend beyond dinner service:

  • Wednesday – Thursdays: 4 – 10 p.m.
  • Fridays & Saturdays: 4 – 11 p.m.

Also, note that the kitchen opens at 5 p.m., they don’t take reservations, and no one under 21 is allowed after 7 p.m.

Beyond Food and Drink

Dry Point Distillers brings energy to the scene with live music, trivia nights, and open mic performances that draw a crowd. The distillery also produces the nation’s first collegiate branded spirit through a partnership with New Mexico State University.

The physical space incorporates art by local creators Jamila Gilbert and Bree Lamb, who designed bottle labels, logos, and brand elements that reflect the regional aesthetic.
