38 Sakes in 38 Days: Day 8 Kirin-zan “Dragon Mountina”
We are celebrating Ten Thousand Waves’ 38th birthday with 38 sakes in 38 days at their splendid Japanese restaurant, Izanami.
Today we continue our discussion of the polishing of the sake rice. Our 8th sake is “Dragon Mountina”, a junmai ginjo with a milling rate of 55% brewed in the Nigata region near Mount Kirin where beautiful rivers run through. The Kirin, a mythical creature akin to a flying unicorn, is believed to bring about happiness. Our sake teacher, Trent, told us that this sake whistles across the pallet- very nice and clean. This sake was definitely one of our very favorites and we thought it paired well with Chef Kiko’s onigiri and fried chicken.
