Santa Fe NM restaurant Maria’s New Mexican Kitchen brings Santa Fe cooking from home straight to the table, just like it was 6 decades ago. For the uninitiated each dish on the menu is the original real item, including tamales, chile rellenos and enchiladas, developed by Maria, the founder of the restaurant, just like was in the beginning.
One question has been asked of patrons since the inception of Maria’s at the same location on Cordova Rd. back in 1950, “Do you want Red Chile, Green Chile, or Christmas?” (the two chiles combined). Servers are talking about famous New Mexico home grown red or green chile, of which if not known is green when it’s not ripe and red when it’s ripened.
Maria’s New Mexican Kitchen started on Fiesta weekend in Santa Fe in 1950. Back then Maria prepared all the meals at her home, brought it to the restaurant, which was sold as carry-out, no dining in was offered initially. The following year Gilbert, her husband, and Maria set up a patio, but as it turns out rain was a constant daily thing back then, so the patio was covered the following year of business. For those that remember and those that don’t know The Cantina was the original covered patio back in the day.
Al and Laurie Lucero purchased Maria's in 1985 and continued to operate the restaurant, together, every day for the next 28 years. More recently Santa Fe Dining Inc. purchased Maria’s New Mexican Kitchen in 2013 from the Luceros.
Famous by most any standard, Maria’s New Mexican Kitchen makes what is considered by many the best Margarita in the Southwest and certainly Santa Fe, NM. Even more amazing is its huge selection of 180 hand-poured, hand shaken, 100% agave margaritas. Additionally Maria’s offers 165 plus tequilas, all of which are offered as a three-tequila-tasting-flight served in half-ounce tastings served up in Reidel Tequila Tasting Glasses.
