37 Sakes in 37 Days:  #1 Chikurin “Lightness”

In celebration of the 37th anniversary of Ten Thousand Waves, we will be sampling 37 sakes from their fabulous Japanese restaurant, Izanami, for the next 37 days-  each week will be featuring a different production method.  We will be tasting the weekly flight from now till February 25th and you can, too!  Be sure to ask for your sake passport and you’ll receive a stamp for every flight you purchase which will enable you to win terrific prizes.

Since this year we are tasting 37 sakes this year, we got an early start by joining Deborah at Izanami last night to begin our celebration.  We all had a marvelous time tasting Chef Kiko’s new offering, Kushiyaki, which are grilled goodies on sticks.  Yum!

Each week we will be talking about the different production methods of making sake and starting today through next week we will be discussing Rice- one of the three ingredients in sake.  High quality premium sake is made from special sake rice.  Sake rice is different from eating rice and it has dozens of types.  However, there are only a handful of them that are really famous.  Yamadanishiki reic, Miyamanishiki rice gohyakumangoku rice and Omachi rice are the most outstanding sake rice.  Each rice has its own unique character for its fragrance, sweetness, richness and Umami.

Next week’s flight, which we had the pleasure of tasting last night at Izanami, featured some old favorites such as Chikurin “Lightness”, always one of my faves.  We thought it paired superbly with Chef Kiko’s spicy sausage Kushiyaki.  This sake is a junmai ginjo  with hints of cherries and champagne, clean and light.  One of the first sakes to be grown with organic rice.  It was delicious.
