37 Sakes in 37 Days: Day 22 Quintessence
We are celebrating Ten Thousand Waves’ 37th birthday with 37 sakes in 37 days at their beautiful Japanese restaurant, Izanami. This week we are highlighting our fifth sake flight. As Mateo said, “This week’s flight is for sake geeks- very out there but in the best way possible.” Some of the sakes in this flight are very difficult to find even in Japan. He also told us that this flight is the most unique flight of this year.
Our 22nd sake is Quintessence, a yamahai junmai with a milling rate of 65%. This sake is really out there! It is super tart and very rare, made with the hot yamahai method and one phase fermentation. Quintessence is very hard to find. We thought it tasted like green apples and champagne and paired well with Chef Kiko’s grilled and fried foods, particularly the grilled avocado and fried chicken. This sake is truly like no other.
