37 Sakes in 37 Days: Day 24 Joto Daiginjo
We are celebrating Ten Thousand Waves 37th birthday with 37 sakes in 37 days at their fabulous Japanese restaurant, Izanami. This week we continue our discussion about the unique sake flight number 5.
Our 24th sake is Joto Daiginjo with a milling rate of 50%. This sake is made with an in-house yeast made of apples. The brewery has been cultivating this yeast since the 1940’s. As you may recall, daiginjo is the most refined sake and we thought the Joto Daiginjo tasted clean and really smooth and paired nicely with Chef Kiko’s shisha wrapped chicken and of course the kinpira gobo.
