38 Sakes in 38 Days: Day 7 “Seven Spearsmen”
We are celebrating Ten Thousand Waves’ 38th birthday with “38 Sakes in 38 Days” at their fabulous Japanese restaurant, Izanami.
Our 7th sake is “Seven Spearsmen”, a junmai with a milling rate of 60%. This sake is brewed in one of Japan’s oldest breweries, currently run by the 15th generation. “Seven Spearsmen” is a complex, earthy sake with hints of melon and mushrooms and has a long, crisp finish. We thought this sake paired very well with Chef Kiko’s spinach salad and the delicious pickle plate.
