37 Sakes in 37 Day:  Day 11 Sublime Beauty Nama

We are celebrating Ten Thousand Waves’ 37th birthday with 37 sakes in 37 days at their wonderful Japanese pub, Izanami.  Today we conclude our discussion of milling by talking about the two remaining grades of sake, ginjo and daiginjo.

Ginjo has a milling rate of 60% or less.  It is made with extra elements such as special ginjo yeast and low temperature long term fermentation.  Generally, ginjo has a nice fruity and flowery fragrance called ginjoka and a delicate flavor.  Ginjo without any additives is called Junmai ginjo.

Daiginjo is the absolute top grade premium sake with a milling rate of 50% or less.  Daiginjo is made with extra care and top grade sake rice.  Generally, daiginjo has a beautiful ginjoka and complicated layers of flavor.  Mostly it is served in cold or room temperature.  Daiginjo without any additives is called Junmai daiginjo.

Our 11th sake is Sublime Beauty Nama, a nama genshu with a milling rate of 90%.  This sake is made by Japan’s first female brewer from organically grown rice and house yeasts, undiluted and unpasteurized, gravity pressed.  Sublime Beauty Nama is full-bodied and elegant.  Kaz called this sake the Sharon Stone from the movie, “DNA”, because as he said, “Even though she’s 78 years old in the film they make her look 20.”  We thought this sake had a bit of a sweet taste and a lot of umami which paired well with Chef Kiko’s fried chicken and onigiri.
