37 Sakes in 37 Days:  Day 28 Dewatsuru Sakura Emaki

We are celebrating Ten Thousand Waves' 37th birthday with 37 sakes in 37 days at their marvelous Japanese restaurant, Izanami.  Today we continue our discussion about nihonshu-do, which is the specific gravity of a sake or the density of the sake relative to pure water.

 The combination of heavier sugar and lighter alcohol will yield a measurable density to which a number can be affixed. This density can be measured with a hydrometer- a small cylinder set to float inside a small tube of liquid.  And on to this an arbitrary scale has been assigned.  This is called the sake meter, which we briefly mentioned yesterday.  Tomorrow we will talk about talk more about positive and negative values on the sake meter.

Our 28th sake is Dewatsuru Sakura Emaki, a futsuushu with a milling rate of 60% and a sake meter value of -24.  This sake is considered the rose of sakes, made from ancient purple rice which lends the sake its beautiful hue. Mateo told us the story how many years ago, farmers tilled the earth and discovered a samurai fort that had red sake in clay vessels.  I love hearing the stories behind the making of these sakes!   Dewatsuru is elegant with a smooth sweetness and we really loved pairing it with Chef Kiko’s chicken-wrapped shiso kushiyaki and zucchini wrapped mozzarella.
