37 Sakes in 37 Days:  Day 34 Kaze No Mori “Wind of the Woods” 

We are celebrating Ten Thousand Waves’ 37th birthday with 37 sakes in 37 days at their splendid Japanese restaurant, Izanami.  Today we continue our conversation about finishing touches in sake making.

What is Namazake?  Nama literally means raw or fresh.  In the context of sake, it refers to “unpasteurized”.  On the other hand, zake is the same as sake.  So Namazake literally  means raw, fresh unpasteurized sake.  Normal sake is pasteurized twice in the sake brewing process.  One is after filtering and the other after diluting.  On the other hand, Namazake is pasteurized only once or even none, being fresher sake.  Namazake have fresher taste and fruitier aroma, whereas normal pasteurized sake is more subtle and soft flavor and usually more suited with food.

Our 34th sake is Wind of the Woods, a junmai muroka with a milling rate of 60% and a sake meter value of +2.5.  This is one of the most sought-after sakes in Japan, with a real cult following devoted to it’s fresh, floral and fruity flavors.  We’ve decided that we love namas!  Wind of the Woods is smooth yet effervescent and very affordable.  We thought this sake paired well with everything we tasted on Chef Kiko’s menu.
