38 Sakes in 38 Days: Day 12 Chokaisan “Mt. Chokai”
We are celebrating Ten Thousand Waves’ 38th birthday with 38 sakes in 38 days at their wonderful Japanese restaurant, Izanami. Today we continue our discussion about the importance of yeast in the sake making process.
Yeast converts sugar to alcohol and carbon dioxide. It is the heart of the creation of all alcoholic beverages. But different yeast strains will produce different things like esters, alcohols and acids and other chemical compounds that affect the nuances of fragrance and flavor. Which esters, alcohols and other compounds are produced are highly dependent on the temperature at which fermentation takes place. All of this will help to determine the character and nature of the sake. In this way, the choice of yeast also directly affects flavor.
Our 12th sake is Chokaisan “Mt. Chokai”, a junmai daiginjo with a milling rate of 50%. Mt. Chokai is a very sacred and special mountain in Northern Japan where the water is softer. The yeast used to make this sake is made from flowers and this gives it an exceptionally elegant floral flavor. As you may recall, daiginjo is the most refined sake and this one is definitely the OMG sake you don’t want to miss! Chokaisan Mt. Chokai is an internationally award-winning sake and we thought it paired nicely with Chef Kiko’s wagyu burger and fried brussels sprouts.
