38 Sakes in 38 Days: Day 24 Dewatsuru Chilled
We are celebrating Ten Thousand Waves’ 38th birthday with 38 sakes in 38 days at their splendid Japanese restaurant, Izanami. Today we continue our conversation about how temperature affects the flavor and body of sake.
Our 24th sake is Dewatsuru chilled. Dewatsuru is a kimoto junmai with a milling rate of 65% produced in the original old-style kimoto brewing method. The other day we talked about how Dewatsuru room temperature had a more pure taste as opposed to the chilled temperature flavor which lends a more mellow flavor. We thought Dewatsuru chilled paired perfectly with Chef Kiko’s braised short ribs and delicious pickle plate.
