38 Sakes in 38 Days: Day 26 Quintessence
We are celebrating Ten Thousand Waves’ 38th birthday with 38 sakes in 38 days at their lovely Japanese restaurant, Izanami. This week we will be talking about dry versus sweet.
Our 26th sake is Quintessence, a yamahai junmai with a milling rate of 65%. This sake has a smv (sake meter value) of -33. This is the sake that has a very unique and unusual taste and we thought it paired nicely with Chef Kiko’s corn fritters and fried chicken.
