38 Sakes in 38 Days: Day 3 Midorikawa “Green River”
We’re celebrating Ten Thousand Waves’ 38th birthday by enjoying 38 sakes in 38 days at their fantastic Japanese restaurant, Izanami. This week we are talking about rice, one of the three ingredients used to produce sake.
Our 3rd sake is Midorikawa “Green River”, a junmai made with a blend of three different types of rice and they are all local and quite unusual varieties. This is highly rare to use a blend of rice in making sake. “Green River” is brewed in Nigata in a brewery founded in 1884. This soothing sake has hints of melon and a dry finish. We thought “Green River” paired nicely with Chef Kiko’s fried chicken and their special that night, Blue Point Oysters- a delicious pairing!
