We are celebrating Ten Thousand Waves' 38th birthday with 38 sakes in 38 days at their fabulous Japanese restaurant, Izanami.  We are down to our last two sakes for this year’s passport flights and today we will be talking about a new and unique sake.

Our 37th sake is Yuki Otoko One Cup, a junmai with a milling rate of 60% and a sake meter value of +12.  This sake is brewed in the Nigata region of Japan which Mateo said is like the Japanese Alps, in other words lots of snow and skiing.  This snow produces extremely clean and pure water for sake brewing.   Not only is One Cup delicious but here is the unique part, you get to keep the sake cup!  We thought One Cup paired nicely with Chef Kiko’s beet salad and shrimp tempura.
