38 Sakes in 38 Days:  Day 38 Jokigen “40”

We are celebrating Ten Thousand Waves’ 38th birthday with 38 sakes in 38 days at their award-winning Japanese restaurant, Izanami.  Today we are talking about our last sake from this year’s flights.

Our 38th and final sake is Jokigen “40”, a junmai daiginjo with a milling rate of 40% and no sake meter value.  This is the most expensive sake of all the sakes we’ve sampled this year.  Jokigen “40” is beautifully rich and luscious with notes of peach and fresh cherry balanced by a finish of ginger and spice.  This sake is made with premium yamada nishiki rice milled to 40%.  We thought this sake was divine and paired so well with everything we tried from Chef Kiko’s glorious menu.  As Mateo says, every day that ends in “y” is a good day for sake!
