39 Sakes in 39 Days: Day 11 Joto Ginjo
We are celebrating Ten Thousand Waves’ 39h birthday with 39 sakes in 39 Days at the lovely Japanese pub, Izanami. This week we will be talking about the importance of yeast in sake brewing. Yeast is extremely important, as yeast influences many elements of sake taste, most noticeably sake fragrance . Since our sense of taste is highly influenced by our sense of smell, this is crucially important.
Our 11th sake is Joto Ginjo, a junmai ginjo with a milling rate of 55%. Because this sake is a junmai ginjo it does not have any additives. One of the things I enjoy about sake are the bottle labels and Joto Ginjo has a lovely, happy label of pink and red dots which represent the two kinds of yeast used to make this sake. We thought the Joto Ginjo was lush and fruity with a clean and crisp finish. We thought the Joto Ginjo paired very well with Chef Kiko’s fried brussels sprouts and kushiyaki.
