39 Sakes in 39 Days:  Day 16 Jokigen “Red Label”

 

We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 days at their spectacular Japanese restaurant, Izanami.  This week we will be discussing yamahai, a variation on the brewing method in which the yeast starter is made in a special way that allows more funky yeast and bacteria to be present, often lending the sake a gamier, wilder flavor that can be fascinating.

Our 16th sake is Jokigen “Red Label”, a Junmai daiginjo with a milling rate of 50% from the Yamagata region of Japan.  Honestly, this week’s flight is amazing and all of the sakes pair so well with food.  Red Label is a favorite sake for most people.  This sake is brewed with omachi rice, the original strains of sake rice, in the traditional kimoto style, pressed with “fune” method, the brew is made from the favored middle pressing part “nakadori”.  We thought Red Label was divine and paired well with everything on Chef Kiko’s menu.
