39 Sakes in 39 Days: Day 19 Joto Daiginjo
We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 days at their fantastic Japanese restaurant, Izanami.
Today we continue our discussion of yamahai. The alter ego of yamahai, in which a bit of lactic acid is added in the beginning, is known as sokujo moto or “fast-developing” moto. Due to a characteristic resistance to new technology, it took about ten years for sokujo moto to gain acceptance on an industry-wide basis. However, most sake today is created using sokujo moto method, as it is faster and easier and leads to a cleaner flavor. In a sense, yamahai is for those with more eclectic tastes.
Our 19th sake is Joto Daiginjo, a daiginjo with a milling rate of 50%. Joto Daiginjo has apple yeasts which the brewery has cultivated since the 1940’s and tastes soft, delicate and clean with hints of crisp green apple. We thought this sake has very smooth and paired beautifully with Chef Kiko’s pichi pichi. You know, I often marvel at the attention to detail and beauty that the Japanese in general display, and the same is with their sakes labels. The Joto Daiginjo label features tiny clocks representing the 72 hours of milling the rice. Beautiful!
