We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 days at their exquisite Japanese restaurant, Izanami.  Today we conclude our discussion about yamahai. 

Despite the additional labor and time required to brew kimoto and yamahai sakes, a few sake breweries have embraced the style, and the results are delicious, especially when paired with food.  Yamahai and Kimoto sakes generally have more acidity than other sakes, plus they add a smoky sweetness and vibrant, distinctive flavor.  Foods that balance savory and sweet pair extremely well with these sakes.

Our 20th sake is Minato Harbor, a yamahai nama genshu with a milling rate of 67%.  This has always been one of our all-time favorite sakes that we order at Izanami for special occasions and not just because it come in an oil can but also because it is so smooth and delicious.  In fact, we love it so much we have so far collected 8 cans that we have on display at home!  Every can of Minato Harbor is brewed with locally grown rice, a special brand of yeast and waters to produce sake that captures the authentic characteristics of Akita.  We think this sake pairs perfectly with everything on Chef Kiko’s menu, especially the fried chicken.
