39 Sakes in 39 Days: Day 22 Fragrant Jewel (cold)
We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 days at their spectacular Japanese restaurant, Izanami. This week we continue our discussion of temperature and how it affects sake taste. Yesterday, we talked about tasting our 21st sake, Fragrant Jewel, served warm had a bit of a bite.
Our 22nd sake is Fragrant Jewel served cold. We thought this sake served cold was much brighter than served warm and was fabulous. Mateo told us that all sake was served hot until 1933 when it became much more refined. We preferred Fragrant Jewel cold but it really is a matter of personal taste. This sake paired nicely with Chef Kiko’s fried brussels sprouts and kushiyaki.
