39 Sakes in 39 Days: Day 31 Forest Spirit
We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 days at their delightful Japanese restaurant, Izanami. This week we will be talking about filtration, pasteurization, additions and and storage.
Among sake labeled as “unfiltered” in English, some are white and cloudy. This is easy to figure out; it is cloudy because they did not filter it. But other times we read “unfiltered” and it is totally clear. Hmmm. The key to understanding this is to realize that there are two “filtrations”. They are called different things in Japanese, but the best English translation for both is filtration.
Our 31st sake is Forest Spirit, a Junmai usu-nigori with a milling rate of 59% and a sake meter value of +6. Mateo told us that this sake is more refined than most nigoris and is not as cloudy. Forest Spirit is made with local rice, yamada nishiki which is the most popular rice for sake brewing. Mateo also mentioned that Izanami has the largest selection of nama sake than any other restaurant in North America. We thought Forest Spirit paired nicely with Chef Kiko’s spinach salad and fried shrimp.
