39 Sakes in 39 Days:  Day 33 Jokigen Yuzu-Shu


We are celebrating Ten Thousand Waves’ 39th birthday with 39sakes in 39 days at their spendifierous Japanese restaurant, Izanami.  Today we continue our discussion about the finishing touches of making sake.

When sake is made, the rice dissolves in the same tank in which the yeast converts the sugars into alcohol and carbon dioxide.  So when the 20 to 35 day fermentation is finished the result is still full of undissolved rice solids.  This is filtered out to yield clear sake.

Our 33rd sake is Jokigen Yuzu-Shu from the Yamagata region of Japan.  This sake is Japan’s native limoncello and uses organic yuzu citrus from Kochi prefecture mixed with premium sake for a refreshing and zesty beverage.  This sake is excellent on its own or over ice.  We have always loved the Jokigen Yuzu-shu because it has so much wonderful flavor and is like having a dessert wine after a delicious dinner with Chef Kiko’s fantastic menu.
