39 Sakes in 39 Days:  Day 5 Mutemuka Nama

39 Sakes in 39 Days" wraps up this week with our 5th sake, Mutemuka, as we continue our celebration of Ten Thousand Waves' 39th birthday.

Mutemuka is produced in the Kochi Prefecture which is on the southwestern part of the island of Shikoku, facing the Pacific Ocean.  Kochi is famous for its many rivers and deep valleys, and the Mutemuka brewery is located close to the source of Japan's purest river.  Founded in 1893, Mutemuka's owner became a pioneer of organic farming when he refused to spray chemicals even against strong opposition from neighboring farmers.

The Japanese regulations governing organic sake are extremely complicated.  To become certified, it is a 3-year process for each rice field.  Organic rice paddies are generally less than half the density of regular fields so yields are about 50% lower and the production costs are generally 25% higher.  It takes a dedicated brewery to make organic sake.

The result of all this hard work, Mutemuka is a very earthy, dry sake with an aroma and aftertaste like no other.  Aged for half a year at room temperature, super high in umami, with a nutty quality.

We thought this junmai genshu was very tasty and paired well with Chef Kiko’s edamame and ishiyaki.  This was yet another delightful sake/food pairing and made for a lovely evening with friends.

And now you can taste Mutemuka and the other fabulous sakes in this week’s flight.  In celebration of the 39th anniversary of the Waves, they bring you 39 sakes to enjoy each week featuring a different aspect of sake.  Taste the weekly flight from now until March 8th and get a stamp in your sake passport.  Collect stamps and win fantastic prizes!  On Fridays, go to santafe.com/contests/honeys-sake-symposium to enter our contest where you name all of the 5 sakes I’ve talked about that week (hint: you can read my blogs in case you missed hearing me talk about them).  On Mondays, we will draw one correct entry and that person will receive two $39 gift certificates to Izanami and a private hot tub for two at Ten Thousand Waves.  On March 9th we will draw our grand prize winner and that person will receive a complete therapeutic massage for two, a private hot tub for two, a multi-course dinner for two at Izanami and an overnight stay at Ten Thousand Waves.  We’re celebrating 39 years of Ten Thousand Waves- your passport to relaxation, from your friends at 98-1 Radio Free Santa Fe.
