39 Sakes in 39 Days: Day 7 “Into Your Soul”
We are celebrating Ten Thousand Waves’ 39th birthday with 39 sakes in 39 Days at their fabulous Japanese pub, Izanami. This week we are talking about polish of the rice.
In the case of premium sake, after proper sake rice has been secured, it is milled or polished, to prepare it for brewing. It must done gently to avoid generating too much heat (which adversely affects water absorption) and avoid cracking the rice kernels (which is not good for the fermentation process).
Our 7th sake is “Into Your Soul”, a tokubetsu honjozo with a milling rate of 60%. We thought that this sake was fruity and paired nicely with Chef Kiko’s spicy sausage kushiyaki. Mateo suggested that if someone has never tried sake that this one would be a good starter.
